association was founded in 1992 by four farmers’ cooperatives of the area:
For
years now these four associations have chosen to privilege the quality, rather
than the quantity, of the olive oil they produce. The
technologies here adopted respect the natural growth and ripening stages of the
olives, stages well known in the millenary local tradition and described in the
treatise De Re Rustica (About Agriculture) by Lucio Giunio
Moderato Columella, one of the most famous agronomists of the ancient times. It
is to this eminent author that the COSAR managers decided to link the
name of their extra-virgin olive oil, produced in complete accordance
with that ancient tradition which alone can assure its absolute and
unquestionable quality. Characteristics of the productCultivars: Carboncella, Leccino, Raja, Pendolino, Frantoio, Muraiolo, Frantoio, muraiolo, Olivestrone, Slaviana, Olivago, Rosciola ( pres. min. 75%). Soil
origin: calcareous,
permeable, dry though not arid, fairly windy. Climate:
fairly temperate. Olive
grove exposure:
facing south for the most part. Output:
max. 6,300 Kg/hectare Yield
(olives in oil): max. 25% Total
natural acidity:
max. 0.4 oleic acid/100 gr. oil Colour:
gold yellow, with green shades in very fresh oils. Smell:
